Soft Brioche Croissants

Soft and delicious brioche croissants. Easy to make: perfect for breakfast and snack time.

The brioche croissants are simple to prepare. Great plain or filled. I filled them with Nutella and pistachio cream, but you can fill them according to your preferences.

Ingredients

  • 2 teaspoons sugar
  • 1 packet dry yeast
  • 210 ml milk (lukewarm)
  • 2 cups Manitoba flour
  • 2.5 cups all-purpose flour
  • 2/3 cup sugar
  • 2 eggs
  • 1 packet vanillin
  • 1 teaspoon honey
  • 1/4 cup butter (softened)

How to Prepare Soft Brioche Croissants

  • In a bowl, add the sugar, yeast, and lukewarm milk. Stir to dissolve the sugar and yeast.

  • Let the starter rest for about 20 minutes.

  • In another bowl, add the two types of flour, sugar, honey, vanillin, and beaten eggs. Mix with a spatula.

  • Add the starter. Mix with the spatula, then continue kneading by hand, gradually adding the softened butter in pieces. You should obtain a soft and elastic dough. The dough should be soft but not sticky. (If necessary, add more flour).

  • Cover the bowl with cling film and let it rise until doubled in size. This will take about two hours. (If you prepare them in winter, the time may increase).

  • After the resting time, take the dough and divide it into two equal parts. Roll each part with the rolling pin. You should obtain two circles of about 12 inches each.

  • Take the first circle and cut it with a knife. Make a vertical cut, one horizontally, and two diagonals. This way, you will get 8 triangles.

  • Take each triangle and roll it starting from the widest part. Bring the tips inward, trying to shape it like a croissant.

  • Do the same with the second circle.

  • Place the croissants on a baking sheet lined with parchment paper. Let them rest for another two hours.

  • Brush with a yolk mixed with a little milk and bake in a preheated static oven at 375°F for about 15 minutes. Please check the cooking times based on your oven.

  • Remove from the oven, let cool slightly, fill according to your taste, and if you like, sprinkle with powdered sugar.

  • Serve and enjoy.

  • Can I use fresh yeast?

    Yes, you can use 20 g of fresh yeast.

  • Can I freeze the croissants?

    Yes. After shaping the croissants without letting them rise, you can freeze them. When you want to bake them, take them out of the freezer the night before, and they will be ready to bake in the morning.

  • How long do they stay soft?

    They remain soft for about 3 days when stored in a freezer bag.
