It is a scenic cake that is simple and quick to prepare. It is perfect for any occasion and is super tasty.

The soft coffee base encloses an irresistible creamy heart of cream, mascarpone, cocoa, and coffee. Be sure to try it, I’m sure it will win you over at the first taste.

For baking, I used the smart tart pan. A type of pan designed to make tarts with a central cavity, which can be filled after baking with creams, fruits, ganache, or other ingredients. After baking and cooling the base, you flip the pan onto a serving plate. The raised central part will be a perfect cavity for holding the desired filling.

Ingredients

  • 2 eggs
  • 1/3 cups sugar
  • 1/4 cups sunflower oil
  • 1/4 cups milk
  • 1/4 cups coffee
  • 1 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cups whipping cream
  • 2 lbs mascarpone
  • to taste sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp coffee
  • Nutella®
  • to taste milk
  • to taste coffee

How to Prepare Soft Coffee and Mascarpone Tart

  • In a bowl, place the eggs and sugar. Mix with an electric mixer until the mixture is light and fluffy.

  • Add the oil, milk, and coffee. Mix with the electric mixer.

  • Add the flour and baking powder. Mix with the electric mixer.

  • Pour the obtained mixture into a 11-inch smart tart pan. Bake in a preheated static oven at 350°F. Let it cook for about 20/25 minutes. Please check the cooking times based on your oven. Remove from the oven, let it cool slightly, and turn it upside down on a serving plate.

  • For the filling, whip the cream, then add the mascarpone and sugar. (Add sugar according to your taste. I added 4 tablespoons. You can decide not to put it). Mix everything well.

  • Divide the mixture into two equal parts.

  • Add unsweetened cocoa to one part and mix. (I also added two tablespoons of sugar, as I used unsweetened cocoa. If you use sweetened cocoa, do not add more sugar).

  • Add two tablespoons of coffee to the second part. Mix.

  • Moisten the cake with milk and coffee or another syrup of your choice.

  • Spread a layer of Nutella and smooth it out.

  • Place the two fillings inside two piping bags with a star tip. Decorate the cake according to your taste. I created concentric circles alternating the two colors.

  • Store in the refrigerator until ready to serve.

Storage

The finished cake should be stored in the fridge for up to 3 days, covered with plastic wrap or in an airtight container. It is not recommended to freeze the cake with the filling, as the texture may change once defrosted. The cake base (without filling) can be frozen well wrapped in a food bag for about 1 month. Defrost the cake at room temperature before filling.

  • Can I replace sunflower oil?

    Yes, you can replace it with corn oil, or with melted butter.

  • Can I replace milk?

    Milk can be replaced with plant-based drinks such as soy, almond, oat, or rice milk.

  • Can coffee be replaced in the dough?

    If you don’t like coffee, you can replace it with the same amount of milk or another liquid like orange juice.

  • Can mascarpone be replaced?

    Mascarpone can be replaced with a creamy cheese like Philadelphia

  • Can I omit Nutella?

    Nutella can be omitted or replaced with another chocolate spread or a layer of jam.

  • How can I moisten the cake?

    You can use just milk, just coffee, or even a sweet coffee liqueur if there are no children.
