Soft Mascarpone Cookies: simple and quick to prepare, perfect for breakfast and snack time.
Mascarpone cookies are very simple to prepare: the ingredients needed are few and are usually available at home. You won’t need cookie cutters to make them; simply take small portions of dough and form balls with your hands.
These are crispy on the outside and soft on the inside, making them perfect for dipping in milk at breakfast.

Ingredients
- 1 egg
- 3/8 cup sugar
- 4 oz mascarpone
- 1 1/4 cup all-purpose flour
- 1/3 cup rice flour
- 2 tsp baking powder
- as needed chocolate chips

How to prepare soft mascarpone cookies
In a bowl, combine the egg, sugar, and mascarpone. Stir with the spoon.
Add the flour, rice flour, and baking powder. Start mixing with the spoon. When you can no longer mix, add the chocolate chips and continue kneading by hand until you get a smooth, homogeneous, and non-sticky dough.
Take small portions of dough (about 1 oz each). Using your hands, form balls, slightly flatten them, and place them on a baking sheet lined with parchment paper.
Dust with powdered sugar and bake in a preheated static oven at 350°F. Let them bake for about 15 minutes. Please check the baking time based on your oven.
Remove from the oven, let them cool slightly, and enjoy.
