Ingredients
- 2 1/2 cups all-purpose flour
- 1 egg
- 3/4 cup ricotta
- 4 tbsp butter (soft)
- 1 1/2 tsp baking powder
- 1 lemon zest
- 1 packet vanillin (vanilla powder)

How to prepare the soft swirls with ricotta and jam
In a bowl add the ricotta and the soft butter. Mix with a fork until you have a smooth cream.
Add the egg and the sugar. Combine well.
Add the lemon zest and the vanilla (or vanillin). Mix.
Gradually add the flour and the baking powder. Mix with the fork and when you can no longer do so, continue kneading by hand.
Knead until you obtain a smooth, homogeneous, non-sticky dough ball.
Transfer the dough to a lightly floured work surface. Divide the dough in half. Roll out each portion with the rolling pin.
Spread jam over each rectangle obtained.
Roll each rectangle up from the long side.
Using a knife, slice the rolls into swirls and place them on a baking tray lined with parchment paper.
Bake in a preheated conventional oven at 356 °F. Let bake for about 20 minutes. Be sure to check cooking times based on your oven.
Remove from the oven, let cool slightly and, if you like, dust with powdered sugar.
