Ingredients
- 3 eggs
- 9/10 cup sugar
- 1/3 cup sunflower oil
- 1 jar yogurt
- 4 tsp coffee
- 2 cups all-purpose flour
- 1 packet baking powder
- 3/4 cup heavy cream
- 7 oz dark chocolate
- 2 tbsp butter

Steps
In a bowl, beat the eggs with the sugar until you get a light and frothy mixture.
Incorporate the oil, yogurt, and coffee, mixing well until you get a homogeneous mixture.
Add the flour and baking powder to the mixture. Gently mix until they are incorporated.
Pour the batter into a clever tart mold (the one with the raised bottom to accommodate the filling), previously buttered and floured. Bake in a preheated static oven at 356°F and let it bake for about 25-30 minutes. Please check the baking time based on your oven.
In a saucepan, pour the cream. Put it on the fire and heat it well until it reaches the boiling point.
Remove the saucepan from the heat. Immediately add the chopped dark chocolate and butter.
Stir with a spoon, without putting it back on the heat, until the chocolate and butter are completely melted.
Pour the still warm mixture into the hollow of the clever tart base.
Let the tart cool at room temperature for about 30-60 minutes, allowing the ganache to begin to set.
Transfer the tart to the refrigerator for at least 2-3 hours or until it is completely compact and shiny. This is essential for the final texture.
Take the tart out of the refrigerator about 10-15 minutes before serving, so that the ganache is not too hard and the flavor is enhanced.
Storage
The soft tart with chocolate ganache should be stored in the refrigerator, covered with a cake dome or in an airtight container, to prevent it from absorbing fridge odors. It keeps for 3-4 days.
