Ingredients
- 2 eggs
- 3/4 cup g sugar
- 3 tbsps g milk
- 2.7 oz g orange juice
- 1/4 cup g sunflower oil
- 1 1/2 cups g all-purpose flour
- 2 tsps g baking powder
- 1 egg
- 1/4 cup g sugar
- 1/4 cup g all-purpose flour
- 2/3 cup g milk
- 3.5 oz g orange juice
- 1 oz g orange juice
- to taste orange juice
- 1 cup g whipping cream
- 1 cup g mascarpone

How to prepare the soft tart with orange cream
In a bowl, insert the eggs and sugar. Mix with a hand whisk.
Add the milk, orange juice, and oil. Mix with the hand whisk.
Finally, add the flour and baking powder. Mix well, being careful not to create lumps.
Pour the obtained mixture into a 28 cm smart tart mold previously greased and floured. Bake in a preheated static oven at 350°F. Let it bake for about 25 minutes. Please check the baking times according to your oven.
Meanwhile, prepare the cream.
In a small saucepan, insert the egg, sugar, flour, milk, and orange juice. Mix everything well. Move to the stove and let the cream cook until it thickens.
Remove the cake from the oven, place it on a serving plate, and leave it upside down. Let it cool, then soak it in the cavity that formed thanks to the baking in the smart mold with orange juice.
To the cold cream, add the orange juice and mix with a spatula.
Fill the cake with the cream, keeping two tablespoons aside.
Insert the whipping cream in a bowl and whip it. Add the mascarpone and mix everything well.
Add the two tablespoons of cream set aside and mix well.
Insert the mixture into a pastry bag and decorate the cake by creating tufts.
Decorate with pieces of fresh melon.
Store in the refrigerator until ready to serve.
Storage
Store the cake in the refrigerator in an airtight container for 2 days.
