How to Prepare Swirls with Orange Cream and Chocolate Chips
In a bowl, place the eggs and lightly beat them with a hand whisk.
Add the sugar and continue beating until you get a slightly frothy mixture.
Add the oil and continue mixing with the whisk.
Add the flour and baking powder. Start mixing with the whisk, then when you can’t do it anymore, add the orange zest and chocolate chips, then continue kneading by hand until you get a homogeneous dough. Set aside for a moment and prepare the cream.
In a saucepan, place the juice and grated zest of an orange.
In another bowl, mix the milk and flour. Mix well with the whisk, being careful not to create lumps. Also add the sugar and mix.
Pour the milk, flour, and sugar mixture into the saucepan with the orange juice. Mix everything well.
Place the saucepan on the stove over medium heat and let the cream cook, stirring continuously until it thickens.
Remove the cream from the heat and transfer it to a bowl. Cover the surface with plastic wrap in contact.
Take the shortcrust pastry and roll it out with the rolling pin on a lightly floured surface. You need to get a rectangle 12×16 inches and about 1/8 inch thick.
Spread the orange cream over the entire surface of the rectangle, leaving a small edge free of about 1/2 inch on one of the long sides.
Roll the rectangle from the side opposite the free edge, forming a compact roll.
With a knife, cut the roll into slices about 3/4 inch thick. You will get swirls.
Line a baking tray with parchment paper. Arrange the swirls on the tray, spacing them slightly apart.
Before baking, brush the surface of the swirls with milk, and then sprinkle with granulated sugar.
Bake in a preheated oven, static at 356°F, and let bake for about 35 minutes, or until they are golden on the surface.
Remove from the oven, let cool, and serve.
Storage
The swirls keep at room temperature, in an airtight container for about 2-3 days. For longer storage, you can freeze them once cooled and thaw them at room temperature before consuming.
