- 3 eggs
- 1/2 cup sugar
- 3/4 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/3 tbsp coffee
- 1 egg
- 1/4 cup sugar

- 1 cup milk
- 1/2 cup whipping cream
- 1/2 cup mascarpone
- as needed chocolate chips
- 2 tbsp coffee
- 1 1/3 tbsp milk

How to Prepare the Tiramisu Cake
In a bowl, add the eggs and sugar. Mix with the electric mixer.
Add the flour and baking powder. Mix with the electric mixer.
Pour the mixture into a 20 cm pan, previously greased and floured. Bake in a preheated, static oven at 356°F. Let it cook for about 30 minutes. Make sure to check the cooking times based on your oven.
In the meantime, prepare the cream. In a saucepan, add the coffee, egg, sugar, flour, and milk. Mix everything well with a whisk, being careful not to create lumps. Move to the stove and cook the cream until it thickens. Stir continuously. Once ready, turn off the stove and cover with cling film.
In another bowl, whip the cream and mascarpone with the electric mixer.
Combine the cream with the mascarpone mixture. Mix with the electric mixer. Set aside.
Remove the cake from the oven. Let it cool well, then cut it in half. Slightly scoop out the base. Soak the base: I used milk and coffee, but you can choose the soaking liquid you prefer. Also soak the inside of the top part of the cake.
Incorporate the chocolate chips into the cream. Mix with a spatula and fill the cake.
Close and store in the refrigerator until serving time.
If you like, sprinkle with powdered sugar before serving.
Storage
In the refrigerator: in an airtight container, it keeps for 2-3 days.
FAQ (Frequently Asked Questions)
Can I substitute mascarpone?
You can substitute it with a spreadable cheese like Philadelphia for a lighter version.
Can I substitute the coffee?
If the cake is also for children, you can use soluble barley or decaffeinated coffee.
