Ingredients
- 5.3 oz agretti
- 1 tbsp baking soda (for washing the agretti)
- 1 shallot
- 2 eggs
- 1 tbsp extra virgin olive oil
- 0.9 oz Pecorino Romano (grated)
- 0.9 oz Parmigiano Reggiano DOP (grated)
- 2 g fine salt

Steps
Remove the roots of the agretti and soak them in water and baking soda for 5 minutes, allowing the dirt to settle at the bottom. Collect them, rinse several times, and drain. In a pan, heat the oil and finely sliced shallot, once it starts to fry add the agretti and stir them. Cover with a lid and cook on low heat for 5 minutes. Turn off the heat and tilt the pan to remove excess liquid. Transfer them to a cutting board and coarsely chop with a mezzaluna. Crack the eggs into the bowl, add the cheeses and beat lightly with a fork. Add the agretti, salt, and mix.
Lightly grease the pan, turn on the heat, and once hot, pour the mixture and cover with a lid. When the edges start to set, turn off the heat for 5 minutes while leaving the lid on. Turn the heat back on and flip the omelette using a plate or lid. Cook for another 5 minutes, turn off the heat, and serve on a plate.
