Ingredients
- 5 2/3 oz egg whites
- 1 cup powdered sugar
- 3/4 oz bitter almonds
- 2 cups almond flour
- 1/3 cup powdered sugar

Steps
Beat the egg whites until stiff using an electric whisk or a stand mixer. Gradually add the powdered sugar (1 cup) and finely chopped bitter almonds.
Add the almond flour, continuing to mix with the electric whisk. Form a dough, wrap it in plastic wrap, and let it rest in the fridge for 1 hour.
Preheat the oven to 320°F. Take the dough and, a little at a time, with damp hands, form balls the size of a walnut. Roll them in the powdered sugar and pinch the top with three fingers. Lay a sheet of parchment paper on the baking tray, place the treats apart and bake for 15 minutes in a fan oven, checking them frequently. Once baked, open the oven door and leave them for 5 minutes. Remove them from the oven and, once cooled, serve the almond paste treats on a tray.
Notes
Almonds have many health benefits; we can benefit from them by including them in our diet or using almond-derived products like oil for massages. They reduce bad cholesterol and are also helpful in preventing diabetes. Being rich in iron and vitamins, especially B vitamins, they combat anemia. However, do not overuse them as they are high in calories.
