Amatrice Pecorino Braided Twists

These Amatrice Pecorino Braided Twists with thyme and pepper are truly delightful for an aperitif. In fact, I read this recipe in Fior Fiore in Cucina, and the pecorino described was supposed to be from Farindola, but in my fridge, I had the delicious one from Amatrice, so I adapted the recipe. The preparation is quick and very simple, try them, and they will be a hit!

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/3 cup pecorino cheese (from Amatrice)
  • 1/2 cup cold butter
  • 1/3 cup milk
  • 1 egg
  • 2 pinches thyme
  • 1 pinch pepper
  • 1/3 tsp fine salt

Steps

  • Pour the flour, cubed butter, all but one tablespoon of pecorino, salt, and thyme into the mixer. Blend and add the cold milk gradually until you obtain a firm dough. Shape into a ball, wrap in plastic wrap, and let rest in the fridge for 30 minutes.

  • After resting, divide the dough into pieces of 0.8 oz each and roll out ropes 8 inches long. Braid them, place on a baking sheet lined with parchment paper, and brush with the beaten egg.

  • Sprinkle with the remaining pecorino, a bit more thyme, and pepper. Bake in a preheated oven at 356°F for 20-25 minutes. Serve cold with cold cuts and pickles.
