Ingredients
- 1 lb lbs baby octopus
- 14 oz oz peeled datterini tomatoes (or ready sauce)
- 1 clove garlic
- 3.4 fl oz fl oz white wine
- A few sprigs parsley
- 1 hot chili pepper
- 0.7 tsp tsp fine salt
- 1.4 fl oz fl oz extra virgin olive oil

Steps
If you have ready-made sauce, that’s fine; otherwise, make fresh with datterini tomatoes cut into pieces, cooked with flavors (onion, basil, oil, salt), and passed through a sieve, then let it dry over the fire for another 10 minutes.
Wash and dry the already cleaned baby octopus. Pour 3-4 tablespoons of oil into a pan and add the garlic clove. Once hot, place the baby octopus and when they turn color, sprinkle them with white wine. Let evaporate and add the chili pepper in pieces.
Pour the datterini tomato sauce, salt, mix, and let it cook on low heat for 40 minutes. If it dries out, extend with a ladle of boiling water. Once cooking is complete, sprinkle the Baby Octopus in Purgatory with chopped parsley.
Notes
If you don’t like spicy, don’t add the chili pepper, they will still be good
