- 3 slices chicken breast
- 2 sprigs rosemary
- 2 leaves bay leaf
- 1 clove garlic
- A few leaves sage
- 0.1 oz coarse salt
- 1 egg (medium)
- 0.9 oz grated Parmesan
- 0.9 oz pecorino (grated)
- 2.8 oz breadcrumbs
- 1.4 tbsp extra virgin olive oil

Steps
Wash the herbs well and dry them with kitchen paper. Remove the rosemary needles, take out the central part of the bay leaves, and put them in the mixer along with the sage leaves, the garlic clove without the core, and the coarse salt. Chop everything very finely. Pour the breadcrumbs, grated cheeses, and chopped herbs into a large plate and mix well together.
Flatten the chicken slices covered with plastic wrap using the meat mallet. In a bowl, beat the egg and dip the chicken slices in it. Once well coated, cover with the breading, pressing well so that everything sticks.
Place the cutlets on a baking sheet covered with parchment paper and drizzle each with a little oil. Preheat the oven to 390 degrees. Once ready, bake and cook for 15 minutes on one side and then 10 on the other. Always check, as you know your oven’s cooking! Storage
