How do you give flavor to a plain slice of chicken breast? Do as I do: make a very fine chop of aromatics such as rosemary, sage, bay leaf and garlic, and add it to your usual breading. Ingredients
- 3 slices chicken breast
- 2 sprigs rosemary
- 2 leaves bay leaves
- 1 clove garlic
- A few leaves sage
- 1/2 tsp coarse salt
- 1 egg (medium)
- 1/4 cup grated Parmesan
- 1/4 cup grated Pecorino
- 3/4 cup breadcrumbs
- 1 1/3 tbsp extra virgin olive oil

Steps
Wash the herbs well and dry them with kitchen paper. Remove the needles from the rosemary, take out the central vein from the bay leaves and put them in the food processor together with the sage leaves, the garlic clove (removed its green shoot) and the coarse salt. Chop everything very finely. Pour the breadcrumbs, the grated cheeses and the chopped herbs into a large plate and mix them together.
Using the meat mallet, flatten the chicken slices covered with plastic wrap. In a bowl beat the egg and dip the chicken slices into it. When well coated, cover them with the breading pressing firmly so everything sticks well.
Place the cutlets on a baking tray lined with parchment paper and drizzle a little oil over each one. Preheat the oven to 392°F. Once hot, bake for 15 minutes on one side and then 10 minutes on the other. Always check as you know how your oven performs! The Baked chicken cutlets with herbs are ready to be served, accompanied by mixed salad.
Storage
Once breaded, the herb chicken cutlets can be frozen separated with parchment paper; if you want to cook them from frozen, thaw them and place them in a hot oven.
