Ingredients

  • 21.2 oz broccoli rabe
  • 1 egg
  • 1/4 cup Pecorino Romano (grated)
  • 1/4 cup Parmigiano Reggiano DOP (grated)
  • 1 clove garlic
  • 2.1 oz breadcrumbs (soaked in milk and squeezed)
  • 1/2 tsp fine salt
  • 1.3 tbsp extra virgin olive oil
  • 1 oz breadcrumbs

Steps

  • Prepare the broccoli rabe by removing the tough stems and keeping the thinner ones with leaves. Wash and rinse them well, then cook in the pressure cooker for 5 minutes after the whistle. Drain and chop with a mezzaluna.

  • Sauté the broccoli rabe in a pan with garlic and oil (chili pepper is optional). In a bowl, place the ground meat, breadcrumbs soaked in milk and squeezed, egg, broccoli rabe, grated pecorino and parmesan, and salt. Mix all ingredients and preheat the oven to 392°F.

  • Take small portions of about 1.4 ounces, form into balls, and then flatten them. Roll them in breadcrumbs and place on a baking sheet lined with parchment paper.
