Ingredients

  • 9 oz ridged penne
  • 7 oz gorgonzola
  • 3 oz cream
  • 3.5 oz walnut kernels
  • 1 shallot
  • 0.7 oz Parmigiano Reggiano DOP (grated)
  • 0.7 oz pecorino romano (grated)
  • 1.4 tbsp extra virgin olive oil

Steps

  • Pour a drizzle of oil into a pan and lightly sauté the finely sliced shallot. Place the gorgonzola on the cutting board, remove the rind, cut it into pieces, and add it to the shallot. Stir with a wooden spoon until it melts, then add the cream, mixing it into the rest of the sauce. Do not add salt.

  • As soon as the water boils, salt it and add the pasta. Meanwhile, coarsely chop the walnuts, add them to the sauce, keeping a handful aside, and stir.

  • Drain the pasta al dente and add it to the pan. Mix, add the cheeses, keeping a few tablespoons aside, and pour everything into a baking dish. Sprinkle with the remaining cheeses and walnuts and bake on grill mode until golden brown.
