The Baked Stuffed Friggitelli are an alternative to those usually fried. This type of non-spicy green chili has an elongated shape and a size ranging from that of a spicy chili to that of a sweet bell pepper. In this recipe, I was helped by what I had in the fridge, all ingredients with strong flavors; after all, when cooking stuffed vegetables, it’s about clearing the fridge of leftovers, and the result is always excellent.

Ingredients
- 9.17 oz friggitelli
- 2 tbsp sun-dried tomatoes
- 1 fresh spring onion
- 1/2 cup cow ricotta cheese
- 1/4 cup salted ricotta cheese (grated)
- 1/4 cup Parmigiano Reggiano DOP (grated)
- 1.76 oz mortadella
- 10 leaves basil
- 1 egg
- 1/2 tsp fine salt
- 1 tbsp extra-virgin olive oil
- 1 tbsp breadcrumbs

Steps
Preheat the oven in static mode to 400°F. Cut the peppers in half, remove the seeds, and wash well. Chop the spring onion, mortadella, and sun-dried tomatoes with the mezzaluna. Pour into a bowl, adding ricotta, Parmigiano, grated salted ricotta, and hand-torn basil leaves.
Mix, add the egg, the salt, and let the mixture rest for a few minutes. Spread a sheet of parchment paper on the baking tray and place the halved friggitelli on it. Stuff them with the filling using a teaspoon. Sprinkle with breadcrumbs and drizzle with a little extra-virgin olive oil. Bake in the middle of the oven and cook at 400°F for 30 minutes. Serve the Baked Stuffed Friggitelli warm.
