Baked Stuffed Omelette

How to change the look of the usual omelette? Just add a few slices of cooked ham and stracchino cheese! Here’s the recipe for the Baked Stuffed Omelette, then zucchini, potatoes, onions, eggs, and Parmesan, all in the oven! But if you prefer, you can also decide to cook it in a pan. Ingredients

  • 3 zucchini
  • 1 potato
  • 1 spring onion
  • 3 eggs
  • 2.5 oz Parmigiano Reggiano DOP (grated)
  • 1 sprig marjoram
  • 0.1 oz fine salt
  • 2 tbsp extra virgin olive oil
  • 2 slices cooked ham
  • 3.5 oz stracchino cheese

Steps

  • Pour the oil into a frying pan and add the thinly sliced spring onion. Wash and trim the zucchini, cut them into cubes. Also cut the potato into cubes and add both to the pan. Cook for 15 minutes and let cool. In a bowl, crack the eggs, add the Parmesan, salt, and chopped marjoram.

  • Slightly beat the eggs and add zucchini and potatoes. Mix and pour half of the mixture into the oiled casserole. Place the slices of cooked ham, the stracchino cheese on top, and cover with the other half of the mixture. Bake in a preheated convection oven at 392°F for 30 minutes until the stuffed omelette has a nice golden color.
