Ingredients
- 6 chicken wings
- 3 shallots
- 2 tbsps extra virgin olive oil
- 1 cup cherry tomatoes
- 1 oz Taggiasca olives (pitted)
- 7 tbsps beer
- 3 peppers (red and yellow)
- 1 tsp fine salt
- 1 tsp dried oregano

Steps
Wash the wings well and remove any feathers by passing them over a low flame. Clean the shallots. Wash the peppers by removing the white parts and seeds, then cut them into medium pieces.
Pour the extra virgin olive oil into a pan and, over medium heat, brown the shallots cut into wedges, then add the wings. Let them brown on one side, then turn them, add the olives and cherry tomatoes cut into quarters.
After a few minutes, pour in the beer, let it evaporate, add the peppers, oregano, and salt. Cover with the lid and cook for 40 minutes, stirring the pieces occasionally. Once cooked, the wings will be golden and the sauce will be reduced. Check the seasoning and serve.
