Ingredients

  • 8 Golden apples (peeled 2.2 lbs)
  • 2 eggs (medium size)
  • 1/3 cup sugar
  • 1/2 cup whole milk
  • 2 tbsps butter (melted)
  • 3/4 cup all-purpose flour
  • 2 tsps baking powder
  • 1 pinch fine salt
  • Half vanilla bean
  • 1 tsp lemon zest (grated)
  • 4 tsps lemon juice

Steps

  • Preheat the oven to 356 degrees F (180 degrees C) in static mode. Peel the apples, cut them into slightly larger pieces, and place them in a bowl. Pour the lemon juice on top and mix so they don’t darken. In another bowl, whisk the 2 eggs with 1/4 cup of sugar, add the milk at room temperature and the melted butter cold. Sift the flour and baking powder and add it to the batter using the hand whisk.

  • Add the grated lemon zest, the pulp of half a vanilla bean, a pinch of salt, and mix. Finally, add all the apples and mix them into the little batter. Don’t be scared if they seem too many. Pour everything into the springform pan of 8 – 9 inches lined with parchment paper. Sprinkle the surface with the 4 tsps of sugar left and bake. Cook midway up for 50 minutes checking that it doesn’t get too colored. Turn off leaving the door slightly open to release steam. After 5 minutes, remove from the oven and once cool, remove from the pan.
