Ingredients
- 1 1/2 cups all-purpose flour
- 1 3/4 cups almond flour
- 3 1/4 cups carrots
- 1 cup sugar
- 3 medium eggs
- 1/2 cup sunflower seed oil
- 1 tbsp orange zest (untreated)
- 1/4 cup orange juice
- 1 packet baking powder
- 1 pinch fine salt
- 1 tbsp powdered sugar (for decoration)

Steps
Preheat the oven to 350°F in static mode. Prepare the oiled and floured pan. Scrape the carrots, cut them into pieces and blend them with the mixer, gradually adding the oil. Wash the orange, grate the zest, and add it to the carrots.
Put the whole eggs and sugar in the stand mixer and whip at maximum speed for 10 minutes. Add the carrot cream and orange zest, the pinch of salt, and gently mix with a spatula. Gradually sift in the flour with the baking powder using a sieve, and always using the spatula, incorporate the powders. Lastly, add the almond flour.
Squeeze the orange and while mixing, add the juice to the dough. Pour into the mold (preferably a springform pan) and bake in the middle rack. Bake for 45-50 minutes depending on your oven. Turn off and leave for a few minutes with the door ajar. Remove from the oven, and once cooled, sprinkle the Camilla Cake without Butter with powdered sugar.
