  • 1 cup cup heavy whipping cream
  • 1/2 cup cup mascarpone cheese
  • 1/2 cup cup powdered sugar
  • 3.5 oz oz 70% dark chocolate

Steps

  • Pour 2/3 cup of cream into a saucepan and as soon as it starts to simmer, add the chocolate chopped into pieces and stir over low heat, let it melt and cool. Separately, in a bowl, whip the remaining 1/3 cup of cream, add the sifted powdered sugar to avoid lumps and mix. Add the mascarpone and incorporate it with the rest.

  • Combine the cooled chocolate with the white cream and mix. Let it rest in the refrigerator for a few hours to solidify. The cream is ready to be used for filling cakes or cream puffs, or it can be served as a dessert.
