Ingredients

  • 2 1/2 cups heavy whipping cream
  • 1/4 cup sugar
  • 5.3 oz 70% dark chocolate
  • Half vanilla bean
  • 1 tbsp gelatin sheets (fish glue)
  • 3 tbsp whole milk
  • 3/4 oz chopped pistachios (for decoration)

Steps

  • Start by soaking the gelatin sheets (fish glue) in cold water so they have time to soften. Pour the liquid cream into a saucepan, add the sugar, the seeds of the vanilla pod, and stir while bringing to a boil. Lower the heat, add the chopped chocolate and let it melt with the cream. Drain the gelatin from the water, squeeze it, and dissolve it in the milk that we have heated beforehand. Add it to the cream, stir a little more, and turn off.

  • Pour into the molds of your choice and let cool. After a few hours, decorate with chopped pistachios and a mint leaf. Store in the refrigerator.
