  • 5 Golden apples
  • 1 3/4 cups all-purpose flour
  • 1/3 cup cornstarch
  • 1/2 vanilla bean
  • 1/2 cup unsweetened cocoa powder
  • 1 cup sugar
  • 7/8 cup butter
  • 3 eggs
  • 1 packet baking powder for desserts
  • 8 g lemon zest (grated)
  • 2 3/4 tbsp lemon juice
  • 1/4 tsp fine salt
  • 2 tsp brown sugar

Steps

  • Preheat the oven in static mode and bring it to 350°F. Prepare the apples, cut 3 into pieces and 2 into slices, and leave them in a bowl soaked with lemon juice. Butter and flour a round baking pan of 8.5 inches in diameter. Melt the butter in the microwave and let it cool. With the electric whisks, beat the eggs with sugar to a creamy consistency, ensuring the mixture is fluffy and falls from the whisks in ribbons. Add the vanilla pulp, a pinch of salt, and the grated lemon zest. In a bowl, sift and mix the dry ingredients (flour, cornstarch, baking powder, and cocoa), and gradually add them to the mixture using a spatula from bottom to top. Pour a few tablespoons of butter at a time and incorporate them using the spatula, do not add more until the first is absorbed. Set aside 3 tablespoons for the end.

  • Add the chunked apples to the batter, mix them into the mixture, and pour it into the pan. Arrange the apple slices on top in a circle, drizzle the remaining melted butter over the apples, and sprinkle with brown sugar. Bake and let cook for 50 minutes, checking the doneness.
