Chocolate-covered cookie bites

The Chocolate-covered cookie bites are an absolute must — they contain no eggs and are no-bake. How did they come about? I had some leftover dry cookies used for the Biscuit and almond coffee salami recipe and thought to crumble them, add almonds, candied orange peel and, in small heaps, dip them in white and dark chocolate . . . pure indulgence!

Ingredients

These quantities make about 30 bites

  • 3.5 oz dry cookies (crumbled)
  • 3.5 tbsp butter
  • 2 tbsp sugar
  • 3.5 oz white chocolate
  • 2.75 tbsp milk
  • 1.4 oz candied orange peel (chopped)
  • 1 oz almonds
  • 3.5 oz white chocolate
  • 3.5 oz 70% dark chocolate

Steps

  • Place the sugar and the cold melted butter in a bowl and whisk together. Heat the milk and add it to 3.5 oz of melted white chocolate. Mix well until smooth and add everything to the bowl with the butter and sugar. Add the chopped almonds.

  • Also add the candied orange peel cut into small cubes and the broken pieces of cookies. Fold well with a spatula so that all the dry parts are fully incorporated. Wait 5 minutes for it to firm up a bit, then use two teaspoons to scoop a small amount and place it on a tray lined with parchment paper. Put in the fridge for 30 minutes.

  • While the bites are firming up, melt the white and dark chocolate in the microwave in two separate small bowls. Using two toothpicks or a small fork, dip each bite into the chocolate and place it back on the parchment paper. Put everything in the fridge and after a few hours they will be ready to enjoy . . . pure indulgence!
