Ingredients

  • 3.5 oz 75% dark chocolate
  • 5 tbsp butter
  • 1/4 cup sugar
  • 2 eggs (medium)

Steps

  • Break the chocolate into pieces and melt it in a saucepan with the butter, stirring to prevent sticking. You can do this in a bain-marie, microwave, or on low heat. Pour the sugar into a bowl and add the eggs, whisking them into a cream.

  • Add the instant coffee to the melted chocolate while it’s still hot, and dissolve it. Combine the lukewarm, almost cool chocolate with the beaten eggs, mixing until well incorporated. Finally, add the sifted flour and gently fold it in with the spatula. Cover the bowl with plastic wrap and let it rest in the fridge for 1 hour. Meanwhile, preheat the oven to 365 degrees Fahrenheit.

  • After the resting time, pour the batter little by little into the molds (aluminum ones work fine) that have been buttered and floured. The batter should fill 3/4 of the way. Bake in the middle of the oven and cook for about 14 minutes. You’ll know they’re ready when a dip forms in the center. Remove from the oven and after 5 minutes, turn out onto a plate. Tips

As an alternative to dark chocolate, you can use milk chocolate or try white chocolate. In the latter case, you can sprinkle it with cocoa powder at the end.
