Steps
Pour the sifted flour and softened butter pieces into a bowl. Work them with your hands until crumbled, then add the sugar, vanilla, grated lemon zest, salt, and ground spices.
Mix and add the whole egg plus the previously beaten egg yolk in a small bowl. Roughly combine with your hands and turn everything onto the pastry board to finish the dough. Form into a disk, wrap in plastic wrap or parchment paper, and refrigerate for 30 minutes. Preheat the oven to 350°F (175°C) in static mode.
Roll out the shortcrust pastry to a thickness of 1/5 inch. Use cookie cutters to shape the dough. Place the cookies on a baking sheet lined with parchment paper and bake. Bake for 15 minutes, ensuring they do not brown too much. Remove from oven and allow to cool.
Prepare the icing by adding lemon juice drops to the egg white and beat until stiff peaks form. Gradually add sifted powdered sugar and continue beating until you get a smooth icing. Place the icing in a piping bag with a small hole at the tip and decorate the cookies, optionally adding colored sprinkles. Allow to air-dry before serving.
