Ingredients
- 3/4 cup all-purpose flour
- 1/4 cup almond flour
- 3 tbsp butter
- 1 egg (medium)
- 5 tbsp powdered sugar
- 1 tsp lemon zest (grated)
- 1 pinch fine salt
- 1/4 cup powdered sugar (for decoration)
- 1 cup raspberries (fresh)
- 1/3 cup sugar
- Half lemon (juice)
- 1 tsp agar agar (or pectin)

Steps
Put the raspberries in a saucepan with the sugar, lemon juice, and agar agar or pectin. Stir and turn on the heat. Let it boil for a few minutes, blend with an immersion blender and strain through a medium mesh strainer. You will get a smooth jam.
For the shortcrust, you can knead with the processor or by hand. Pour the flours, diced butter, grated lemon zest and start by creating a sandy texture by working the flour and butter. Add the 40 grams of powdered sugar, egg, a pinch of salt and finish quickly on the pastry board. Wrap the dough in plastic wrap and let rest in the fridge for 15 minutes.
Preheat the static oven to 350°F (175°C).
Roll out the shortcrust between two sheets and with a floured cutter, cut out 20 stars. Half should remain whole, and on the other half, cut a smaller star in the center. Place the shortcrusts on a baking sheet covered with parchment paper and bake. Cook for 10 minutes, remove from oven and once cool, place a teaspoon of raspberry jam on one part and cover with the other star half, previously dusted with powdered sugar. Place on the plate and serve.
