Ingredients
- 2 1/4 cups all-purpose flour
- 4 tbsps unsweetened cocoa powder
- 2/3 cup sugar
- 2/3 cup butter
- 1 egg
- 1 pinch fine salt
- 1 vanilla bean
- 7 oz Nutella®
Tools
- Food scale
- Food processor
- Plastic wrap
- Cookie cutter
Steps
Pour the flour into the food processor along with the cold butter and pulse. This process is called sanding. Add the cocoa, sugar, egg, vanilla bean seeds, and a pinch of salt. Pulse again until the dough is combined. Pour it onto the work surface and form a ball. Wrap it with plastic wrap and refrigerate for 1 hour.
Preheat the oven in static mode to 340 degrees Fahrenheit. Take the dough and roll out a sheet 1/8 inch thick with a rolling pin. Use a cookie cutter to form many circles. Place the cookies on a baking tray lined with parchment paper. On half of the circles, you can stamp some phrases like… home made, eat me (if you have stamps). Bake for 15 minutes.
Once baked, let them cool. Spread a teaspoon of Nutella on half of them and cover with the other half. Your Cocoa Shortbread Cookies with Nutella are ready for a delicious snack!
Storage
Store the Cocoa Shortbread Cookies with Nutella in an airtight container.
