Ingredients

  • 4.25 oz parboiled rice
  • 2 zucchini (with flower)
  • Half yellow bell pepper
  • Half red bell pepper
  • 2.5 cups peas
  • 1 red scallion
  • 2 tbsp extra virgin olive oil
  • 0.07 oz fine salt
  • Few leaves mint (for decoration)

Steps

  • Cook the rice in salted boiling water and once cooked, drain it and let it cool by spreading it out in a baking dish. Slice the scallion, cut the zucchini and peppers into pieces. Pour the oil into a pan, sauté the scallion and add the vegetables.

  • Add the peas as well, stir, and let cook for 15 minutes. Finally, salt and add the flowers cut into thin strips. Stir-fry for a few minutes then turn off the heat and let cool. Add the rice and mix. Prepare the dish a few hours ahead, it will be more flavorful.
