Cold Rice with Stir-Fried Vegetables is a very pleasant summer dish that is easy to prepare. There is no traditional recipe, everyone makes it with their preferred ingredients. Ready-made jars are available for preparing rice salad, but if you have time, you can use cooked ham, cheeses, olives, corn, tuna, and many other ingredients. Ingredients
- 4.25 oz parboiled rice
- 2 zucchini (with flower)
- Half yellow bell pepper
- Half red bell pepper
- 2.5 cups peas
- 1 red scallion
- 2 tbsp extra virgin olive oil
- 0.07 oz fine salt
- Few leaves mint (for decoration)

Steps
Cook the rice in salted boiling water and once cooked, drain it and let it cool by spreading it out in a baking dish. Slice the scallion, cut the zucchini and peppers into pieces. Pour the oil into a pan, sauté the scallion and add the vegetables.
Add the peas as well, stir, and let cook for 15 minutes. Finally, salt and add the flowers cut into thin strips. Stir-fry for a few minutes then turn off the heat and let cool. Add the rice and mix. Prepare the dish a few hours ahead, it will be more flavorful.
