Creamy Mezze Maniche

If you arrive home at the last minute, a quick first course is what solves lunch. As an alternative to the usual steak, you can prepare this little recipe in 15 minutes, Creamy Mezze Maniche with zucchini and gorgonzola with mascarpone. Ingredients

  • 5.64 oz mezze maniche rigate
  • 1 lb zucchini
  • 1 shallot
  • 3.5 oz gorgonzola and mascarpone
  • 0.7 oz Parmigiano Reggiano DOP (grated)
  • 2 tbsps extra virgin olive oil
  • 0.5 tsp fine salt

Steps

  • Since we are in a hurry and it’s late, put the pot of water on the stove for the pasta. Peel and slice the shallot and sauté it with the oil in a frying pan. Wash the zucchini, dice them, and add them to the sauté. Let them cook for 5 minutes but don’t let them become mushy. Add a little salt as the gorgonzola with mascarpone will provide the right amount of saltiness.

  • As soon as the water boils, add salt and the Mezze Maniche, which cook in 13 minutes (check the package). Drain the pasta and add it to the pan with the zucchini. Mix and add the gorgonzola with mascarpone, stirring well with a wooden spoon. Before serving, sprinkle with grated Parmigiano Reggiano.

Tips

To vary, the Creamy Mezze Maniche can also be made using asparagus, broccoli, eggplants, or whatever you have in the fridge, as the gorgonzola with mascarpone has a sweet flavor that matches all vegetables.
