Everyone can make an apple cake, but the light trend demands it with little sugar, no eggs, no butter, and I wonder… what do you put inside then? Well, my Delicious Apple Cake is made with all the right ingredients and well caloric because, in my opinion, it’s about moderation, little but good! This is Angela’s recipe, a dear friend who worked in a well-known bakery in my city and made it herself in the shop for 40 years, so draw your own conclusions!

Ingredients
- 2 cups All-Purpose Flour
- 1/4 cup Cornstarch
- 1 cup Sugar
- 7 oz Butter
- 3 Eggs (medium)
- 5 Golden Apples
- 1 packet Baking Powder
- 2 tsp Lemon Zest (zest and juice)
- 3 tbsp Lemon Juice
- 1 Vanilla Pod
- 2 tbsp Brown Sugar
- 1 pinch Salt

Steps
Preheat the oven to 350°F (static mode). Grease and flour a round pan with a 10 in. diameter. Melt the butter in the microwave and let it cool. Peel the apples, dice 3 into large cubes, and slice 2 into even slices if possible. Place them in a bowl with the juice from half a lemon and a sprinkling of sugar (10 g). Use electric beaters to cream the eggs with the sugar until the mixture is fluffy and falls from the beaters in ribbons. Add the vanilla pulp, a pinch of salt, the grated lemon zest, and continue to mix using a spatula.
Pour the two flours with the baking powder and, using the sifter, sprinkle them little by little from the bottom up to avoid deflating the batter. While stirring, add three tablespoons at a time of cold melted butter, incorporating it into the mixture. Do not add more until the previous portion has been absorbed. Set aside 6 tablespoons. Add the diced apples, mix them into the batter, and pour it into the pan.
Arrange the apple slices in a circle or as you prefer, but make sure to lay them flat on the cake; otherwise, they will sink. Drizzle the remaining butter over the apples and sprinkle with brown sugar. Bake and cook for 50 minutes, checking doneness.
