Sunday morning, standing in front of the fridge with the door open, what do I cook? I check the shelves and decide what to make with what I found. I have a head of radicchio, some sausage, and gorgonzola. I also prepare a creamy béchamel sauce that always goes well, and there it is! With what I had, I managed to cook some Delicious Lasagna with Radicchio and Gorgonzola, try it too . . .

Ingredients
- 1 1/4 cups all-purpose flour
- 1/3 cup semolina flour
- 2 eggs (large)
- 1/2 tsp fine salt
- 1 tbsp extra virgin olive oil
- 1 head radicchio from Treviso IGP, tardivo
- 3.5 oz sausage
- 10.5 oz gorgonzola
- 1/2 cup grated parmesan
- 1 shallot
- 4 tsp extra virgin olive oil
- 2 1/2 cups milk
- 1/4 cup butter
- 1/4 cup flour
- 1/2 tsp fine salt
- 1 pinch nutmeg

Steps
Prepare the dough by mixing all the ingredients. Form a loaf and let it rest for 1 hour covered with a cloth.
Wash the radicchio and cut it into strips. In a pan with a little oil, brown the finely sliced shallot.
Add the peeled and crumbled sausage. Let it brown and add the radicchio. Stir and let it simmer on low heat.
Bring the milk to a boil. In a saucepan, melt the butter, add all the flour at once and stir. Pour the roux into the boiling milk and stir with a whisk for 5 minutes until it has thickened. Salt and add a pinch of nutmeg.
Take the dough and prepare the lasagna to your preferred size. Bring the water (salted with a drop of oil) to a boil to blanch the lasagna. Put four at a time and boil for two minutes. Drain them and dip them in a bowl with cold water. Repeat with the other lasagna. Preheat the fan oven to 428°F.
Pour a few tablespoons of béchamel into the baking pan. Place the lasagna (in my pan, I put four at a time), add a little seasoning, pieces of gorgonzola, parmesan, and béchamel. Continue layering, finishing with gorgonzola and parmesan. Bake and cook for 40 minutes. Remove from oven and let the delicious lasagna with radicchio and gorgonzola rest.
