  • 7 oz cherry tomatoes
  • 1.4 oz feta
  • 10 leaves basil
  • 1 tsp dried oregano
  • 0.1 oz fine salt
  • 2 tbsps extra virgin olive oil

Steps

  • Cut the eggplant in half leaving the stem, place the two halves on a baking sheet with parchment paper, and poke holes in the skin with a fork. Bake in a preheated oven at 390 degrees Fahrenheit for 40 minutes. Once cooled, remove the skin and slice up to the stem, open into a fan shape and season with salt.
