Ingredients

  • 5 oz cabbage
  • 5 oz canned yellow corn kernels (organic)
  • 20 Taggiasca olives (pitted)
  • 5 oz mayonnaise (with yogurt)
  • 3 tbsps plain natural yogurt
  • 2 g fine salt

Steps

  • Remove the core and tougher leaves of the cabbage, which can be used for a soup. Cut it into very thin strips, place them in a colander, rinse under running water, and let them drain.

  • Place the sliced cabbage in a bowl, add the corn drained of its liquid, and the pitted and chopped Taggiasca olives. Prepare a mayonnaise and thin it with 3 tablespoons of whole natural yogurt. Pour it over the cabbage, corn, and olives, season with salt, and mix. Store the Fresh Cabbage and Corn Salad in the refrigerator until ready to serve.
