Fresh Capricciosa Salad Appetizer

Whether it’s summer or winter, when we sit down at the table, we occasionally need to think of simple, fresh recipes that satisfy the palate and don’t weigh us down too much. The Capricciosa Salad is the perfect appetizer. Certainly, mayonnaise is included and it’s not very light, but just don’t use too much. Here, I’ve used cooked ham, but if you want to prepare this salad in the colder months, leftover boiled meat cut into strips is ideal, a way to reuse it.

Ingredients

  • 1 jar pickled mixed vegetables (cut into sticks)
  • 3.5 oz cooked ham (in a single slice)
  • 8 slices Fontina cheese
  • 3/4 cup mayonnaise
  • 2 tablespoons plain natural yogurt
  • 10 Taggiasca olives (pitted)

Steps

  • Prepare the mayonnaise at home or, if you prefer, use store-bought. If you take my advice, make it in advance; it takes just a few moves and a few minutes with an immersion blender. Cut the cooked ham and Fontina cheese into matchstick-like sticks. Pour the pickled mixed vegetables into a colander and rinse well under running water to remove the strong vinegar taste. Drain and dry by patting with kitchen paper.

  • Pour everything into a bowl and add half the olives, the mayonnaise, and the yogurt. Mix well and keep refrigerated until ready to serve. Decorate the Capricciosa Salad with the remaining Taggiasca olives.

Tips

If you want to prepare this salad during the colder months, take advantage when you have leftover boiled meat. Cut into strips, it replaces cooked ham and is even better. This is also a way to reuse leftovers. As I always remind . . . nothing goes to waste!!
