  • 1/3 cup butter (soft)
  • 2/3 cup powdered sugar
  • 1 egg (medium)
  • 1 sheet puff pastry (rectangular)
  • 1 teaspoon almond essence
  • 1 egg yolk (to brush on the surface)
  • 1 almond (to hide inside)

Steps

  • Place the soft butter in a bowl, add the powdered sugar and use the whisk to make it creamy. Add the egg and continue mixing.

  • Pour in the flour, and almond essence, and mix well. Roll out the rectangular sheet and cut 2 disks 8 inches in diameter. Place one disk in the pan with parchment paper underneath, spread the frangipane cream on top, and randomly place an almond.

  • Preheat the oven to 392°F in static mode

    Cover with the other disk, pressing along the edges to seal it well. Use the rounded tip of a knife to draw rays (be careful not to cut through the pastry). In a small bowl, beat the egg yolk and brush it on the surface. Let it rest in the refrigerator for 30 minutes. Bake in the lower part of the oven (below the middle) and cook for 2530 minutes. Turn off and let cool.
