  • 3.53 oz sweet bacon
  • 0.71 oz Parmigiano Reggiano DOP
  • 0.71 oz Pecorino Romano
  • 0.35 oz butter
  • 0.35 tsp fine salt
  • 1.06 cups milk
  • 0.71 oz butter
  • 0.71 oz flour
  • 1 pinch nutmeg
  • 1 pinch fine salt

Steps

  • Clean the cauliflower under running water. Wash it well, removing the outer leaves (which can be used in soups) and separating the florets. Cook in a pressure cooker with the basket for 5 minutes from the whistle. Prepare the béchamel sauce according to the recipe. Meanwhile, in a small pan without adding oil, brown the diced bacon. Preheat the oven to 437°F with fan.

  • Add the browned bacon to the béchamel sauce and mix. Take the cauliflower florets and place them in a lightly buttered baking dish, season with salt to taste, and cover with the sauce. Sprinkle the surface with grated Parmesan and Pecorino cheese. Add some butter flakes and bake. Cook for 10 minutes and then another 5 minutes under the grill. The Gratinated Cauliflower with bacon is ready, and you’ll taste the deliciousness.
