Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/3 cups almond flour
  • 1/2 cup butter
  • 2/3 cup sugar
  • 1 egg (small)
  • 1 egg yolk
  • 1 tsp lemon zest
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1 cup grape jam (Montepulciano grape jam)
  • 2 oz tea biscuits (or amaretti)
  • 3 1/2 oz 70% dark chocolate
  • 1/4 cup unsweetened cocoa powder
  • 3 1/2 oz shelled almonds
  • 2 tbsps powdered sugar

Steps

  • Sift the all-purpose flour and place it in the bowl along with the almond flour. Add the cold butter in pieces and mix it with the flours until it’s sandy. Add the sugar, vanilla extract, grated lemon zest, a pinch of salt and mix. Finally, add the beaten egg plus the egg yolk and quickly knead without warming the dough. Make a dough ball, flatten it, and let it rest in the fridge wrapped in parchment paper for 15 minutes.

  • Put the biscuits or amaretti in a bag and coarsely crush them. Toast the almonds in a small pan and crush these as well. Break up the dark chocolate and put everything in a bowl along with the cacao and the grape jam. Mix and let the filling rest for 10 minutes.

  • Preheat the oven to 347°F (static mode)

    Roll out 2/3 of the dough leaving 3/4 inch for the edges and place it in the mold with parchment paper underneath. Prick the bottom with a fork and fill the heart with the filling. With the remaining dough, form irregular strips and decorate the surface. Use a heart-shaped cutter to make other scattered decorations. Bake in the middle of the oven for 40 minutes. Remove from the oven and once cool, sprinkle the surface with powdered sugar.
