Ingredients
- 3 slices chicken breast
- 2 sprigs rosemary
- 2 leaves bay leaves
- 1 clove garlic
- A few leaves sage
- 1/2 tsp coarse salt
- 1 egg (medium)
- 1/4 cup grated Parmesan
- 1/4 cup grated Pecorino (grated)
- 3/4 cup breadcrumbs
- 1 1/3 tbsp extra virgin olive oil

Steps
Wash the herbs well and dry them with kitchen paper. Remove the rosemary needles, remove the central vein from the bay leaves and put them in the food processor together with the sage leaves, the garlic clove (freed from its core) and the coarse salt. Chop everything very finely. Pour the breadcrumbs, the grated cheeses and the chopped herbs into a large plate and mix them together.
With a meat mallet flatten the chicken slices covered with plastic wrap. In a bowl beat the egg and pass the chicken slices through it. When well coated, cover them with the breadcrumb mixture pressing firmly so that everything sticks well.
Place the cutlets on a baking tray lined with parchment paper and drizzle a little oil over each one. Preheat the oven to 392°F. As soon as it’s ready, bake and cook 15 minutes on one side and then 10 on the other. In any case always check, you know how your oven cooks! The Herb-baked chicken cutlets are ready to be served accompanied by mixed salad.
Storage
Once breaded, the Herb-baked chicken cutlets can be frozen individually separated with parchment paper. To cook them, thaw and put them in a hot oven.
