Sometimes you get that craving… yes, that craving for something good like a nice Hot Chocolate in a Cup. On cold afternoons, in the company of some friends (in my case my husband, who wants to be on a diet) what could be more pleasant than chatting over a cup of hot chocolate that pampers us. Accompanied by whipped cream and a bit of cinnamon, I would say it’s the ultimate pleasure.

Ingredients
- 2 cups whole milk
- 1.4 tbsp powdered sugar
- 1 tbsp cornstarch
- 1.4 tbsp unsweetened cocoa powder
- 3.5 oz 75% dark chocolate
- 3/4 cup heavy cream
- 1 tbsp powdered sugar
- 0.04 tsp ground cinnamon
Tools
- Pot
- Bowl
- Whisk
- Plastic Wrap
- Electric Mixer
- Kitchen Scale
Steps
Pour 1 3/4 cups of milk into a pot and heat it without bringing it to a boil. In a bowl placed in a double boiler, melt the chopped extra dark chocolate. In another bowl, combine the powdered sugar, cornstarch, and unsweetened cocoa. Pour the remaining milk (1/2 cup) over the powders, letting it fall slowly to mix everything without forming lumps.
When the milk is hot, add the tempered powders, stir with a whisk, and once well combined, add the melted extra dark chocolate. Keep on low heat, stirring continuously for 2 minutes, avoiding boiling; you will see that the chocolate will have thickened, and you can turn off the heat. Keep it covered with plastic wrap in contact (to prevent it from drying out) just long enough to whip the cream if you haven’t done it before (I will do so next time).
Pour the liquid cream into a bowl and whip it with electric beaters. Gently add the sifted powdered sugar and incorporate it using a spatula. Pour the hot chocolate in a cup, decorate with dollops of whipped cream, and sprinkle with a little cinnamon. Enjoy this delight in good company and relaxation.
