After making lady’s kisses, I thought, why not use the same dough for the base of a tart? Said and done! I prepared the base and after baking it in the oven, I spread it with a dark chocolate ganache cream. As decoration, an alternative to the lattice were small half kisses arranged on the base and sprinkled with hazelnut crumbs. And now let’s prepare this delicious Lady’s Kiss Tart.

Ingredients

  • 1 3/4 cups toasted hazelnuts
  • 1 cup sugar
  • 2/3 cup butter
  • 1 2/3 cups all-purpose flour
  • 1.4 oz 75% dark chocolate
  • 1/4 tsp fine salt
  • 3/4 cup heavy whipping cream
  • 5.3 oz 75% dark chocolate
  • 2 tbsps hazelnut crumbs

Steps

  • Pour the hazelnuts with the sugar, dark chocolate into the mixer and chop until powdered. Then add the butter, flour, and a pinch of salt. Mix everything well, form a dough ball, wrap it in plastic wrap and let it rest in the fridge for 1 hour.

  • Preheat the oven to 340°F. Use a springform pan and line it with parchment paper. Take the dough and set aside a small portion for preparing the decoration kisses. Roll out the rest in the pan to a thickness of 1/5 inch. To do this best, place the dough between two sheets of parchment paper and roll over it with the rolling pin. Leave the paper underneath and place it in the pan. Bake in the middle of the oven for 18 minutes, checking often. It should not darken too much. Once ready, remove from the oven and let cool. Bake the balls for the kisses and bake for 15 minutes again at 340°F. To prepare the ganache cream, put the cream in a saucepan and as soon as warm, add the chocolate pieces.

  • Stir until melted, pour the warm cream over the tart, and level it. Decorate the surface with the half spheres arranged around the edge. Make 3 kisses by attaching them with a bit of melted chocolate and place them in the center. Sprinkle the crumbs and refrigerate for a few hours. The Lady’s Kiss Tart is ready to be served. The leftover half kisses are great served separately when you offer coffee!
