Ingredients

  • 9 lamb ribs
  • 4 potatoes
  • 2 eggs (medium)
  • 1 tbsp roast herbs (rosemary-sage-bay leaf)
  • 1/3 cup breadcrumbs
  • 1/2 cup Parmigiano Reggiano DOP (grated)
  • 1/4 cup pecorino sardo (grated)
  • 1 clove garlic
  • 2.5 tbsp extra virgin olive oil
  • 1/2 tsp fine salt

Steps

  • Finely chop rosemary, sage, 1 bay leaf, and garlic with the chopper. Prepare the breading on a plate composed of breadcrumbs, grated cheeses, salt, garlic, and chopped herbs. In another plate, crack the eggs, beat them, dip the ribs in the eggs on both sides, coat them in the breading pressing well to make it adhere, and place them on the baking tray greased with 2 tsp of oil.

  • Bring a pot of water to a boil and blanch the peeled and evenly cut potatoes. Drain them and place them in a bowl. Season them with 1 1/2 tbsp of oil, mix, add the remaining breading, and mix again so that the potatoes are well breaded. Place these too on the tray, pour the remaining oil over the ribs, and bake. Cook for 45 minutes, turning ribs and potatoes halfway through.
