Light Tiramisu with Ricotta

Who doesn’t know Tiramisu, one of the most popular desserts in Italy, a spoon dessert made with mascarpone, biscuits, coffee, and eggs which I chose to eliminate by also replacing half of the mascarpone with ricotta. The result? A lighter, delicious dessert that has nothing to envy from the classic one, a Light Tiramisu with Ricotta.

Ingredients

  • 5.3 oz ladyfingers (about 18)
  • 8.8 oz mascarpone
  • 7.1 oz ricotta
  • 3/4 cup powdered sugar
  • 2/3 cup coffee
  • 2 tbsp sugar
  • 3.5 oz dark chocolate 70%
  • 1/4 cup coffee

Tools

  • Food scale
  • Bowl
  • Electric beaters
  • Coffee maker

Steps

  • Prepare the coffee, sugar it, and let it cool (if there are no children, you can add a few tablespoons of rum or brandy). In a bowl, mix using beaters, the mascarpone with the powdered sugar, and then add the ricotta, always stirring until you get a cream. Separately in a small bowl, break the chocolate bar, add the 1/4 cup of coffee and melt by stirring over low heat or in the microwave. In a 8 x 6 inch dish, spread a base of white cream and cover with ladyfingers soaked in coffee.

  • Use a spoon to drizzle the coffee and chocolate cream, make another layer of ladyfingers, more white cream, and more coffee and chocolate cream letting it drip as it comes. Put it in the fridge for a few hours before serving. Even without eggs, it is delicious… I give you my word!
