Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup butter
- 2/3 cup sugar
- 1 egg (medium)
- 1 egg yolk
- 1/4 tsp salt
- 1 vial lemon flavor
- 1 vial vanilla
- 3/4 cup jam (black mulberry)
Tools
- Food scale
- Springform pan 9.5 in
- Parchment paper
- Work surface
- Pastry cutter
- Bowl
- Rolling pin
Steps
Pour the sifted flour into the bowl, add the butter in pieces and the sugar. Start mixing with your hands to make the dough crumbly, then add the eggs, previously beaten in a small bowl, the salt, and the flavorings.
Finish kneading on the work surface. Make a dough ball, wrap it in parchment paper, and let it rest in the fridge for 30 minutes. Preheat the oven to 350°F in static mode. Cover the bottom of the pan with parchment paper, roll out a disc made with half of the shortcrust pastry and prick it with the tines of a fork.
With the other half of the shortcrust pastry, prepare the strips that will form the lattice. Spread the mulberry jam over the disc, cover with the pastry strips also forming the border, which you can decorate if you like. Bake in the center for 30 minutes. Once out of the oven and cold, sprinkle with powdered sugar.
