My Mom’s Apple Fritters

As a child, when my mom made these fritters for me, it was a celebration. They were simple, but their taste was special to me! Just a few simple ingredients: apples, flour, water, and sugar. They weren’t just for carnival but sometimes a ‘special’ snack. Now I want to share them with you, even though you might say they’re nothing special, but as I said, they are a good and special memory. Here are My Mom’s Apple Fritters.

Ingredients

  • 2 Golden apples (medium-sized)
  • 1 cup g all-purpose flour
  • 2 tablespoons sugar
  • 2/3 cup ml water
  • 2 g orange zest (grated)
  • 2 g lemon zest (grated)
  • 4 teaspoons lemon juice (to prevent apples from browning)
  • 1/2 vanilla pod (pulp)
  • 2 tablespoons powdered sugar (for decoration)
  • 2/3 cup ml peanut oil (shouldn't be too much)

Steps

  • Peel the apples and cut them into cubes. Place them in a bowl with the juice of half a lemon. Add the grated zest of ½ lemon, ½ orange, the pulp of half a vanilla pod (which my mom didn’t use because it was too expensive), and two tablespoons of sugar. Mix and start adding the flour, one spoonful at a time, incorporating it into the apples and alternating with water until you get a mixture that is neither too hard nor too liquid.

  • When you scoop the batter with a spoon, it should not drip. Pour a little peanut oil into a pan and, once hot, place a spoonful of the mixture. Fry the fritters well and let them become golden and crispy. A few minutes per side is enough; when they detach from the bottom on their own, they’re ready to be turned. Drain them, let them dry on kitchen paper, and roll them in sugar. My Mom’s Apple Fritters should be served very hot.
