The Octopus Ragù is a delicious seafood sauce for main dishes. To enjoy it at its fullest, I prefer to cook the octopus cut into cubes directly with the sauce, so all its flavors remain in the seasoning. With this ragù you can dress any pasta shape, although I prefer to use dry pasta that holds the sauce well, such as penne. If you have any leftover octopus, use it to make a fresh Octopus Salad.

Ingredients
- 1.3 lbs octopus (clean weight)
- 1.3 cups tomato sauce
- 0.4 cups dry white wine
- 1/3 cup carrot
- 1/4 cup shallot
- 1/8 cup celery
- 1 clove garlic
- 1/3 cup extra virgin olive oil
- 1/3 oz basil

Steps
Proceed with cleaning the octopus or do as I do and request cleaning directly at purchase. Cut the tentacles and slice into pieces about 0.4 inches. Pour the oil into the pot and add the garlic clove. As soon as it starts to sizzle, add the octopus and sauté over high heat for about 15 minutes. Deglaze with the white wine, remove the garlic and add coarsely chopped carrot, celery and shallot.
Add the tomato sauce and if it seems too thick, thin it out with one or two ladles of boiling water. Stir and let cook on low heat for 45 minutes. At the end of cooking, add the torn basil leaves. Use the Octopus Ragù to dress your favorite pasta.
