Orange and Almond Crinkle Colomba, a very quick last-minute recipe designed specifically to have this shape on the Easter table. Since there was no more time to knead the classic dough (and I had a 500 gram mold) I thought of preparing a dough similar to crinkle cookies, so I used almond flour and 00 flour, orange juice and zest, butter, eggs and flavorings, sprinkled with sugar and almonds. Ten minutes of preparation and 40 minutes of baking for an excellent result, to be repeated. Follow the instructions and make it with me.

Ingredients
- 1 2/3 cups 00 flour (type 00 / all-purpose)
- 1 cup almond flour
- 7 tbsp butter (soft)
- 1/2 cup granulated sugar
- 1 egg (medium)
- 1 pinch fine salt
- 2 tsp baking powder
- 3 tbsp + 1 tsp orange juice
- 1 tbsp + 2 tsp orange zest (grated)
- 1 tsp orange extract
- 1 tsp vanilla extract
- 2 2/3 tbsp powdered sugar
- 2 tbsp + 1 tsp granulated sugar
- 1 oz almonds

Steps
Preheat the oven to 347°F (conventional/non-fan)
In a bowl, work the granulated sugar with the soft butter cut into pieces. Add the egg and mix using a whisk, then add the salt, the grated orange zest and the juice. Pour in the almond flour and mix.
Add the 00 flour sifted together with the baking powder, add the flavorings of vanilla and orange, mix and pour everything into the colomba mold.
Sprinkle the surface first with granulated sugar and then with powdered sugar. Place the almonds on top, bake on the middle rack and cook for 40 minutes. Once baked, let it rest a few minutes with the door slightly ajar, then remove from the oven and let cool.
Slice the Crinkle Colomba . . . delicious!
Tips
The Orange and Almond Crinkle Colomba is also delicious if you substitute the orange with lemon.
