The tart is one of the most well-known homemade desserts. A base of shortcrust pastry is prepared, covered with jam, and finished with shortcrust pastry strips placed diagonally. It’s perfect for any occasion and loved by everyone. If we use organic products as I did for the Organic Lemon Tart, the result will be excellent. Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 egg
  • 1 egg yolk
  • 7 oz butter
  • 1/2 cup sugar
  • 1 tsp lemon zest (organic)
  • 1 vanilla bean
  • 1 pinch fine salt
  • 3/4 cup lemon marmalade (organic)

Steps

  • Pour the flour onto the pastry board in a mound, add the cold butter, sugar, a pinch of salt, grated lemon peel, vanilla bean pulp, and eggs.

  • Start mixing the ingredients and quickly form a dough ball. Wrap it in parchment paper and let it rest for 30 minutes in the fridge. Take the dough ball, place it on a sheet of parchment paper, roll it out with a rolling pin, place it with the paper into the mold, and prick the bottom.

  • Pour the lemon marmalade, roll out the remaining shortcrust pastry on the pastry board, make many strips, place them diagonally to form diamonds, and one around the edge. Place the tart in a preheated static oven at 350°F for 30 minutes, checking (not all ovens are the same). Remove from the oven, let cool, and serve the Organic Lemon Tart.
