- 1 cup butter
- 1 2/3 cups all-purpose flour
- 3/4 cup potato starch
- 3/4 cup powdered sugar
- 1/4 tsp fine salt
- 3 tbsps apricot jam
- 3 tbsps plum jam

Steps
Boil the eggs, shell them, remove the whites, and collect the yolks in a bowl. Make a well on the work surface with the flour, potato starch, and sifted powdered sugar. Add the salt and sifted yolks. Add the softened butter cut into pieces. Knead quickly, rubbing the butter and flour between your hands, and form a dough ball. Wrap it in plastic wrap and let it rest in the fridge for 30 minutes.
Preheat the oven to 340°F (170°C). Divide the dough into 4 parts, and rolling them on the pastry board, form 4 cylinders. Cut pieces the size of walnuts (0.67 oz) and mold them with your hands to form balls. Gradually place them on the baking tray covered with parchment paper, and with the pressure of a finger, form a small cavity in the center. With a teaspoon, place a little jam in the center of each ball. Bake and cook for 15 minutes. Turn off the oven, let them cool, and serve the Ovis Mollis Cookies on a nice tray.
