These delightful Parmesan Baskets are not only pleasing to the eye but also delicious. In this recipe, I chose to use them as containers for lentils and cotechino, but they can be filled with rice or, as in the recipe for Cacio e Pepe Spaghetti. They can be prepared in the microwave, oven, or as I did, in a non-stick pan, which I believe is the best way.

Steps
Place parchment paper at the bottom of the pan. Pour the grated Parmesan on top and compact it well with the back of a spoon, giving it a round shape. Turn on the heat, and slowly the cheese will begin to melt and fry, coloring and forming a crust. Remove from the pan with the help of tongs.
Slide the wafer onto an upside-down bowl and, being careful not to burn yourself, shape it with your hands. There’s no need to grease them. This step should be done fairly quickly because as soon as it cools, it can no longer be shaped and will break. After a few minutes, the baskets are ready to be filled. I prepared a good mashed potato, lentils, and fresh cotechino. Once everything was warmed up, I filled the Parmesan Baskets.
Storage
The Parmesan Baskets can be prepared in advance and stored in a paper bag in the refrigerator.
